Ottolenghi's Aubergine Curry

1) Simple but so flavoursome. The tomato layer - wow.

2) Very forgiving when I didn't read the method properly and arguably overcooked the eggplant.

3) I happened to have all required ingredients at home except a red onion and curry leaves (don't omit though!).
